Your choices
Things you can turn off at any time:

These are two separate consents. Turn one off and the other stays: different people are writing to you, and each can be refused on its own.
Each carries the date it has applied from. The switch takes effect immediately — there is nothing to confirm.
Accepted
Slotsy's Terms and Privacy Policy are shown with a date and no switch. That is not an oversight: no longer agreeing to them means closing your account, which is a different act. If that is what you want, the account is closed from your profile.

Not only the fact is kept, but the wording you saw. If the studio changes its rules later, your consent stays tied to the version you read.
Asked once
The newsletter boxes appear until you answer them. Once you have, later bookings do not show them again — and leaving a box unticked cancels nothing: silence is not a refusal.
Changed your mind? The switch is here, in this section. Turn it off and the studio sees it on your customer card and stops writing.
Why you are not asked to consent to data processing
Because the booking itself does not need consent, and it would not be real consent anyway: without processing your contact details the booking is impossible, and consent the service cannot happen without is not freely given. The basis here is the contract between you and the studio.
Instead, the confirmation step shows who processes your details: the studio, with Slotsy only providing the platform.
